This amazing and refreshing smoothie is so easy and could definitely handle a spoon of powdered greens without becoming too ‘earthy’.I used to love having a mango lassi with my veg thali before I became vegan. A lassi is a traditional Indian drink, made with yoghurt, fruit and often salt. It’s also amazing for calming the tingle of spicy food so no need to worry about finding a rogue dried chilli in your dinner! This vegan version is sweeter but still pays homage to my childhood treat.
2 small to medium pears (I used 1 absolutely huge one)
1/2 sweet and ripe mango
2 cups coconut milk
