Day 13 : Peanut Butter Cup

This is the best evening treat and even works well as a breakfast. While there’s not a whole lot of fruit in here, there are oats, nuts and dates (three of which equate to one of your five a day!) Definitely satisfying.
I’m not a huge fan of chocolate. When I became vegan, I really didn’t miss it at all. I was partial to a peanut butter cup or two in my time though, and not the whole foods variety either. I love the mix of salty and sweet. Dates and nut butters along with some cacao seem to curb this craving wonderfully.

You’ll need:
1 tbsp raw cacao
2 tbsp nut butter
1/2 cup rolled oats
2 cups almond milk
3 large medjool dates
Flaked almonds and cacao nibs to garnish

Soak the oats in the milk for an hour
Add the mixture to the de-stoned dates, nut butter and cacao and blend until smooth.
Top with the nibs and flaked almond and enjoy.
