This smoothie is my healthier take on a mojito. Sadly, it doesn’t include rum. On the up side, I can drink it before work and still have a job by the end of the day!I wanted to put together something light and refreshing that reminded me of summer.
These flavours resemble a sweet, garden salad and bring sunshine into gloomy, February mornings.
1 sharply flavoured apple (I used a pink lady)
1/2 a dessert pear
A handful of fresh mint
Juice of 1 lime
2″ piece of cucumber
4-5 gem lettuce leaves
1-2 tsp maple syrup
1/2″ piece ginger, peeled
1-2 cups water
Roughly chop the ingredients and blend until smooth.
